Don’s African Spaghetti Sauce
- 2 cloves garlic crushed
- 2 tbsp. oil
- 2 tbsp of butter
- 1 large red onion chopped
- 1 carrot chopped
- 1 celery stick chopped
- 1, 14 oz. can of diced tomatoe
- 1, 14oz can of crushed tomatoes
- 1 ½ cup diced beef (top sirloin, stewing beef)
- 2 Cups beef stock
- 1 ½ cups Full bodied red wine
(Pinotage Cabernet is best)
- 1 tbsp brown sugar
- ¼ cup fresh parsley chopped
1. Brown Beef In one pan with 2 tbsp. oil
2. In a separate pan on low heat simmer vegetables in 2 tbsp of butter till celery is translucent
3. Combine all ingredients into a large 3 quart saucepan or slow cooker and simmer uncovered for 1 ½ hrs or until sauce has reached desired thickness.
* Add 1 tbsp crushed chili pepper for a spicy sauce.
